Chicken Marinade
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- ½ teaspoon smoked paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 teaspoon lime juice
- Salt & pepper to taste
- 2 chicken breasts boneless, skinless, sliced
Wrap Fillings
- 4 flour tortillas medium/large
- 1 red bell pepper sliced
- 1 yellow bell pepper sliced
- 1 green bell pepper sliced
- ½ red onion thinly sliced
- ½ cup corn kernels fresh or canned
- 1 ripe avocado sliced
- ½ cup shredded cheese cheddar or Mexican blend
- ¼ cup sour cream or Greek yogurt optional
- Fresh cilantro for garnish
- Lime wedges to serve
Marinate the Chicken:
In a bowl, whisk olive oil, chili powder, cumin, paprika, garlic and onion powders, lime juice, salt, and pepper. Add chicken, toss well, and marinate for at least 10 minutes.
Assemble the Wraps:
Lay tortillas flat. Add cooked chicken, sautéed vegetables, avocado slices, corn, cheese, and a dollop of sour cream or yogurt.
