Southwest Chicken Wrap

This easy Southwest Chicken Wrap is packed with grilled chicken, colorful bell peppers, red onion, and creamy avocado — all wrapped in a warm tortilla. Perfect for a high-protein lunch, meal prep, or weeknight dinner!

Ingredients
  

Chicken Marinade

  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon lime juice
  • Salt & pepper to taste
  • 2 chicken breasts boneless, skinless, sliced

Wrap Fillings

  • 4 flour tortillas medium/large
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 green bell pepper sliced
  • ½ red onion thinly sliced
  • ½ cup corn kernels fresh or canned
  • 1 ripe avocado sliced
  • ½ cup shredded cheese cheddar or Mexican blend
  • ¼ cup sour cream or Greek yogurt optional
  • Fresh cilantro for garnish
  • Lime wedges to serve

Instructions
 

Marinate the Chicken:

  • In a bowl, whisk olive oil, chili powder, cumin, paprika, garlic and onion powders, lime juice, salt, and pepper. Add chicken, toss well, and marinate for at least 10 minutes.

Cook the Chicken:

  • Heat a skillet or grill over medium-high heat. Cook the chicken for about 5–6 minutes per side or until fully cooked and slightly charred. Set aside.

Sauté the Veggies:

  • In the same pan, sauté sliced bell peppers and onions for 3–4 minutes until slightly tender but still crisp.

Assemble the Wraps:

  • Lay tortillas flat. Add cooked chicken, sautéed vegetables, avocado slices, corn, cheese, and a dollop of sour cream or yogurt.

Wrap and Serve:

  • Roll the tortilla tightly, cut in half if desired, and serve with fresh lime and cilantro.
